It stays at eleven degrees all year, which is all the climate control a Riesling needs.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">We ferment with the yeasts the grapes bring in, in old 1,200-litre oak casks, and leave the wines on their lees until spring.
